Ingredients

  • 1 onion
  • 2 tablespoons olive oil
  • 8 eggs
  • salt
  • 340 grams tuna (in brine)
  • 20 black olives

Directions

  1. Peel the onion and cut into small pieces.
  2. Heat a pan with olive oil and let the onions brown over low heat for 4/5 minutes.
  3. Beat the eggs with a fork, add salt.
  4. Add the tuna chunks to the pan.
  5. Add the chopped black olives.
  6. Add all ingredients into the bowl with the eggs, mix, and pour into the hot pan.
  7. Cook on low heat so that the eggs cook . Turn the tortilla over on a plate and slide it back in the frying pan and continue cooking for 4/5 minutes.
  8. Transfer into a plate and let cool before cutting into cubes.

I enjoyed this as a change from my usual tuna sandwich. It definitely is more interesting as far as the taste buds are concerned and is fairly easy to throw together for lunch.
