Torrijas are Spain's version of French toast, which are more often served as dessert than for breakfast. To make it, brioche bread is sliced into points (or strips) and soaked in a hot milk mixture that's nfused with cinnamon (both stick and powder) and then coated in beaten egg. These are then fried until crisp on the outside, soft on the inside--and utterly delicious, especially when sprinkled liberally with cinnamon-sugar as soon as they are finished cooking.

Ingredients

  • 2 liters milk
  • 8 tablespoons sugar
  • cinnamon stick
  • ground cinnamon
  • 2 loaves bread (stale)
  • 4 eggs
  • sunflower oil

Directions

  1. Heat the milk with the half of the sugar and the cinnamon stick in a large pot on medium heat. Sprinkle in some ground cinnamon and mix well. Once it boils, remove the pot from the stove.
  2. Strain the milk and let it cool.
  3. Cut the loaves of bread into 2- to 3-centimeter thick slices and soak in the milk completely and place them on a tray.
  4. Beat the eggs and use it to cover each slice.
  5. Fry in very hot sunflower oil.
  6. Place them on paper towel to remove excess oil and let them cool.
  7. In a bowl, mix the remaining sugar and some ground cinnamon. Sprinkle on top of the fried Torrijas and serve.

When I began making this recipe I could not believe how incredibly easy it was to make. The directions were fairly straight forward and it turned out amazing. My family was so impressed that they requested I make it at least once a month. Giving this recipe 5 stars all the way.
