Ingredients

- 1/2 cup ketchup
- 2 Tbsp. soy sauce
- 2 Tbsp. Worcestershire sauce (for sauce)
- 2 Tbsp. mirin
- 1 Tbsp. yellow mustard
- 1 Tbsp. sugar
- 1 tsp. granulated garlic
- 1/2 tsp. ground allspice
- 2 large eggs
- 2 tsp. Worcestershire sauce (for dredging mixture)
- 2 tsp. sundried tomato paste (or tomato paste)
- 1 tsp. toasted sesame oil
- 1 cup all-purpose flour
- 1 1/2 cups panko
- 1 tsp. granulated garlic
- 1 tsp. granulated onion
- 4 pork loin chops (6 ounces each, pound evenly with a mallet to tenderize loin chops to about 1/2 inch thick)
- 1 white cabbage (small)
- 2 tomatoes
- shiso leaf (shredded, optional topping)
- scallion (or chive, finely chopped, optional topping)
- 1 tsp. ground cayenne (or Japanese chili powder, optional for spicy coating)
- 3 Tbsp. shichimi togarashi (or toasted sesame seeds and/or black sesame seeds, optional for spicy coating)

Directions
- Combine 1/2 cup ketchup, 2 Tbsp. soy sauce, 2 Tbsp. Worcestershire sauce, 2 Tbsp. Mirin, 1 Tbsp. yellow mustard, 1 Tbsp. sugar, 1 tsp. granulated garlic, and 1/2 tsp. ground allspice in small bowl.
- Whisk up 2 large eggs, 2 tsp. Worcestershire sauce, 2 tsp. sundried tomato paste (or tomato paste), and 1 tsp. toasted sesame oil in shallow dish. Add 1 cup flour to another shallow dish. Add 1 1/2 cup panko, 1 tsp. granulated garlic, and 1 tsp. granulated onion to a third dish.
- Preheat oil over medium heat. Line a baking sheet with parchment or foil and a wire rack.
