The popular sports-bar snack is easy to make at home, too, and with endless variations on the theme. Here, the original version is preserved, with cheddar cheese, bacon bits, and sour cream as the classic toppings. The secret to their success is in the second step, where the scooped-out potatoes are coated with butter and returned to the oven for about 15 minutes before being sprinkled with cheese and baked until melted--and the potato skins crisp.

Ingredients

  • 4 potatoes (washed)
  • 50 grams butter
  • salt
  • cheddar cheese (grated)
  • 150 grams bacon
  • sour cream

Directions

  1. Preheat the oven to 220 degrees Celsius.
  2. Poke the potatoes several times and wrap in aluminum foil.
  3. Bake the potatoes for 1 hour.
  4. Remove the potatoes, cut in half and remove some of the potato pulp.
  5. Coat the potatoes with butter. Sprinkle with salt. Wrap in foil again and bake for another 15 minutes.
  6. Add the cheddar cheese on top and bake for a few more minutes.
  7. Place the bacon strips between two pieces of parchment and microwave on high power for 2 minutes.
  8. Add the bacon on top of the potatoes and serve with sour cream.

I really liked how quick and easy this recipe was to make, as well as how delicious it was to eat. It was a perfect dish for my family and it had lots of bold flavors and a nice crunch to it when you bit into them; opposed to soggy like many other recipes. I look forward to making this 5 star recipe again in the future.
