A bright, crunchy and colorful topping for crostini, this rustic, healthy celery and tomato melange is combined with crushed garlic, fresh basil, salt and pepper. It's dressed in olive oil and allowed to rest for 30 minutes to let flavors marry. Then, it's spooned on custy slices of bread for a refreshing snack or light meal that can be enjoyed any time of the day or night — guilt-free.

Ingredients

  • crostini
  • bread
  • tomatoes
  • celery
  • extra-virgin olive oil
  • salt
  • ground black pepper
  • fresh basil
  • crushed garlic

Directions

  1. Place the crostini or toasted bread slices on a serving platter and drizzle with a just a few tablespoons of water to soften the bread slightly.
  2. In the meantime, cut the tomatoes and celery into cubes.
  3. Place the cubes in a bowl and add the oil, salt, black pepper, fresh basil, and garlic. Stir well to combine and let the mixture rest for approximately 30 minutes.
  4. Place the mixture in spoonfuls over the bread.
  5. Refrigerate for approximately 20 minutes before serving.

This recipe was really great! I wasn't sure at first about moistening the crostini, but it all worked out and it was awesome!
