Ingredients

  • egg noodles
  • tomato puree
  • leek
  • peas (Baby)
  • basil
  • ricotta cheese (Salted, aged)
  • extra-virgin olive oil
  • salt
  • sugar

Directions

  1. Place a few tablespoons of oil in a terracotta saucepan and add some thinly sliced leek. Saute it until it is transparent.
  2. Add the tomato puree and a handful of peas.
  3. Season to taste with salt and a pinch of sugar.
  4. Cook the sauce until done.
  5. In the meantime, cook the pasta, drain it, and add the sauce.
  6. Before serving, sprinkle the pasta with chopped basil and some grated salted ricotta cheese.

I was a bit afraid to make this recipe when I started out; but, I am so happy that I tried it. It had that extraordinary ricotta cheese taste streaming through it and the noodles were nice and soft. The tomato gave it a great taste; while the peas did not turn to mush like I anticipated. A ultimate 5 star dish that is going to bless our table often.
