Description

The essence of ease: Cherry tomatoes, green olive, and feta cheese are baked in parchment-paper packets until heated through and the cheese is beginning to melt. Cooking en papillote is a healthy way to prepare vegetables (and meat, chicken, and fish), needing just a touch of oil to carry the flavor. It’s also easy to pull off and makes a lovely presentation, cut open (carefully, as steam will escape) at the table. Serve with grilled chicken or fish.

Ingredients

4 bunches cherry tomatoes
120 grams feta cheese
2 tablespoons green olives
4 teaspoons olive oil
basil

Directions

1Preheat oven to 150 degrees Celsius.
2Cut 4 sheets of parchment paper. Rinse and wipe the tomatoes. Place 1 bunch of tomatos on each sheet of paper.
3Cut thick slices of feta cheese in cubes, and place them on the tomatoes.
4Add 1/2 tablespoon of olives to each foil, sprinkle with basil, 1 teaspoon of olive oil, and pepper. Close the foils.
5Bake for 30 minutes. Remove the foils and open.
