More of an idea than a "recipe" per se, this salad puts summer produce to excellent use. Ripe tomato, corn, leek, and basil is called for here, but you can and should swap out (or embellish) these with other vegetables and herbs that are at their peak of flavor. This refreshing salad is a great starter; to make it into a main course, add canned tuna or beans, hard-boiled eggs, and/or olives.

Ingredients

  • tomatoes
  • leek
  • corn
  • fresh basil leaves
  • salt
  • black peppercorns
  • oregano
  • extra-virgin olive oil (or yogurt dressing)

Directions

  1. Thinly slice the tomatoes and the leek in a bowl.
  2. Add the corn and the chopped basil leaves.
  3. Season to taste with salt, freshly cracked black pepper, and oregano.
  4. Drizzle with olive oil or yogurt dressing.
  5. Serve with garlic bread. You may also add tuna, olives, or hard boiled eggs.

This salad had such a unique and distinctive taste to it that I almost couldn't stop eating it. The tomatoes provided the juiciness that I desired and the corn and leeks all mixed well together. Nothing in this salad hid the flavor of other ingredients and it really packed a powerful taste to it. From now on I am replacing my plain salads with this 5 star salad
