Chicken was slightly overdone, maybe because i had cut the chicken breasts into smaller than half slices... still overall a great and healthy meal. My kids loved it!

so simple, but i didn't have vinegar, i added lemon to some white vinegar and a touch of soy sauce, i kind of was dry,i would add a spoon of water next time

Good!! The vinegar has to be watched closely or turns to syrup quickly and even more quickly starts to burn. Overall good!

It was great however, if I cook this dish again, first I would lessen the time on the chicken. Then again, it depends on the thickness of the breast so be careful and avoid over cooking. Secondly, I’d cook the tomatoes at 1 minute instead of 2 and instead of cooking the balsamic vinegar, I’d just pour it on. It was too syrupy but it did liquify after it was poured over the heated vegetables. Lastly, I’d add additional seasoning to the vegetables. They were a little bland.

Flavors were good. Chicken was tender due to marination in tomato herb marinade. Could've cooked the tomatoes less time, for texture. Paired it with wild rice and broccoli.
