• 2 tablespoons olive oil
  • 1 onion (small)
  • 1 garlic clove
  • 1 tomato (ripe)
  • 1 bay leaf
  • 1/2 red pepper
  • 1 cup rice
  • 2 1/2 cups water


  1. Pour the olive oil in a pan, add onion and minced garlic and sauté on low heat.
  2. Peel the tomatoes, remove the seeds and mash in the pan.
  3. Add the bay leaf.
  4. Cut the pepper in cubes.
  5. Add to the pan and stir.
  6. Let cook a little until the tomatoes are tender, and add 2 cups of hot water.
  7. Season with salt.
  8. When the water starts to boil, add the rice.
  9. Stir, cover, and cook.
  10. When almost all the water is evaporated, make sure it is cooked.
  11. Add a little more water if desired, depending on your preferred rice consistency.
