This Italian recipe is so colorful you will not want to take your eyes off of it. Flavors of spice are brought together from the thyme, pepper, tomatoes and garlic. The vegetable stock adds a colorful creamy texture to the dish. This is a great appetizer which can be ready in 45 minutes.

Ingredients

  • 200 grams tomatoes (ripe)
  • vegetable oil
  • 1/2 onion (peeled and julienned)
  • 200 grams red bell pepper (seeded and cubed)
  • 2 garlic cloves (peeled)
  • 2 stalks fresh thyme
  • 250 milliliters vegetable stock
  • heavy cream

Directions

  1. Scald the tomatoes in boiling water and peel them.
  2. Saute the onion and bell pepper in a tablespoon of oil with the tomatoes.
  3. Add the garlic and thyme. Cook for 5 minutes.
  4. Add the vegetable stock and simmer 10 minutes.
  5. Remove the thyme stalks and mash the mixture.
  6. Pass the soup through a fine-mesh sieve, mix in the cream, and refrigerate a few hours before serving.

What an amazing soup that needs no crackers. We love to dip sour dough bread in it, or just eat it all by itself. The flavor combinations are intense and it a bit on the spicy side. Perfect for a four course meal when you need something a little on the fancy side.
