Ingredients

500 grams bread flour
25 grams yeast (brewer’s)
250 grams water
50 grams oil
salt
sugar
tomatoes (sliced thin)
mozzarella cheese (shredded)
pesto sauce
parmesan cheese (grated)

Directions

1Preheat the oven to 260 degrees Celsius.
2In a bowl, add the flour and make a well in the center.
3Add the yeast and dissolve it in the water.
4Gradually mix together, adding the oil and 10 grams of salt to form a dough.
5Knead and work the dough into a loaf shape. Leave to rest 1 1/2 hours.
6Divide the dough into portions of 150 to 180 grams.
7Flatten the dough into a well greased or lined pan.
8Bake the dough for 15 minutes. Turn halfway through to ensure even cooking.
9Remove from the oven, garnish with the tomato, seasoned with a pinch of salt and sugar.
10Add a small amount pesto and cheeses.
11Bake until the mozzarella is melted and slightly brown, 5 to 6 minutes.
