Ingredients

  • 500 grams bread flour
  • 25 grams yeast (brewer’s)
  • 250 grams water
  • 50 grams oil
  • salt
  • sugar
  • tomatoes (sliced thin)
  • mozzarella cheese (shredded)
  • pesto sauce
  • parmesan cheese (grated)

Directions

  1. 1Preheat the oven to 260 degrees Celsius.
  2. 2In a bowl, add the flour and make a well in the center.
  3. 3Add the yeast and dissolve it in the water.
  4. 4Gradually mix together, adding the oil and 10 grams of salt to form a dough.
  5. 5Knead and work the dough into a loaf shape. Leave to rest 1 1/2 hours.
  6. 6Divide the dough into portions of 150 to 180 grams.
  7. 7Flatten the dough into a well greased or lined pan.
  8. 8Bake the dough for 15 minutes. Turn halfway through to ensure even cooking.
  9. 9Remove from the oven, garnish with the tomato, seasoned with a pinch of salt and sugar.
  10. 10Add a small amount pesto and cheeses.
  11. 11Bake until the mozzarella is melted and slightly brown, 5 to 6 minutes.
