Ingredients

  • 1 tablespoon vegetable oil
  • 2 onions (medium, thinly sliced)
  • 40 1/2 ounces chopped tomatoes (with basil and garlic)
  • 2 teaspoons granulated sugar
  • 3 tablespoons fresh basil (chopped)
  • 8 slices sourdough bread
  • 2 1/2 tablespoons butter (at room temperature)
  • 1 1/2 ounces parmesan cheese (shredded)

Directions

  1. Preheat oven to 400°F. Lightly grease an 8 inch square baking dish.
  2. Heat oil in a large frying pan over medium heat. Sweat onion for 8-10 mins, or until very soft. Add tomato and cook for 10 mins, or until slightly thickened. Add sugar and basil. Season. Transfer to prepared dish.
  3. Spread 1 side of bread with butter then place in dish, buttered-side up, overlapping. Sprinkle with cheese and bake for 30 mins, or until bubbly and golden.
