What better way to warm up after a fun afternoon in the snow than with this Tomato Soup recipe. While it is similar to a traditional tomato soup, this recipe also uses roasted red peppers, onions, olive oil, canned whole peeled tomatoes, sugar and salt. It’s best topped with cilantro, mint or basil to taste. And don’t forget your favorite fresh bread for dipping.

Ingredients

  • 1 roasted red pepper (fresh or canned)
  • 1 onion (chopped)
  • 50 grams olive oil
  • 1 can whole peeled tomatoes
  • 1 pinch salt (to taste)
  • 2 teaspoons sugar
  • 100 grams bread (from the previous day)
  • 1 bunch cilantro (mint, or basil, to taste)

Directions

  1. Combine the pepper and onion in a food processor and grind for several seconds.
  2. Heat the olive oil in a pot, then add the ground pepper and onion and saute for approximately 8 minutes.
  3. Add the can of tomatoes, with the juice. Season the mix with salt, add the sugar, and cook on high for approximately 30 minutes, stirring regularly.
  4. After 30 minutes, puree the mix using a hand mixer or food processor for about 3 seconds on medium to low speed.
  5. Add the bread and the cilantro, mint, or basil and stir well for a few seconds.

This is a great tomato soup recipe. I will make this many times throughout the year. I liked that the onion and pepper are pureed to make a nice smooth soup. Make sure you taste as you're cooking because you may need more or less sugar depending on how sweet your tomatoes are. I ended up using a little less. Also, I only used basil in my soup as that is my favorite herb with tomatoes.
