Description

- 1/2 Tbsp. olive oil
- 1/2 cup onion (chopped)
- 1/4 cup mushrooms (canned)
- 100 grams ham (diced)
- 1 clove garlic (chopped)
- 1/2 tsp. paprika
- 15.5 oz. chickpeas (canned, drained)
- 1 cup water
- 1 Tbsp. chicken bouillon (powdered)
- 3 tomatoes (ripe, chopped)
- panela cheese (diced, or basket cheese)

Directions
- In a large saucepan, heat the olive oil and saute the onion, mushrooms, ham, garlic, and paprika. Once the onion is transparent, add the chickpeas, water, powdered bouillon, and tomatoes.
- Cover the saucepan and boil for 15 minutes. Turn the heat off and let the soup cool for a few minutes. Puree until smooth using a hand mixer or in the blender.
- Garnish with the panela cheese and serve.
