Description

Tomato soup is hearty, sweet, savory, and a perfect nostalgic meal on a cold winter day. This recipe, which has four servings takes 35 minutes to prepare. It is a decadent twist on a traditional favorite. Ingredients include olive oil, onions, mushrooms, ham, garlic, paprika, chickpeas, water, chicken bouillon, tomatoes, and queso panela cheese. If you want to kick up that traditional family favorite, then try this wholesome recipe.

Ingredients

  • 1/2 tablespoon olive oil
  • 1/2 cup onions (chopped)
  • 1/4 cup mushrooms (canned)
  • 100 grams ham (diced)
  • 1 clove garlic (chopped)
  • 1/2 teaspoon paprika
  • 15 1/2 ounces chickpeas (canned, drained)
  • 1 cup water
  • 1 tablespoon chicken bouillon (powdered)
  • 3 tomatoes (ripe, chopped)
  • queso panela (diced, or basket cheese)

Directions

  1. In a large saucepan, heat the olive oil and saute the onion, mushrooms, ham, garlic, and paprika. Once the onion is transparent, add the chickpeas, water, powdered bouillon, and tomatoes.
  2. Cover the saucepan and boil for 15 minutes. Turn the heat off and let the soup cool for a few minutes. Puree until smooth using a hand mixer or in the blender.
  3. Garnish with the panela cheese and serve.
