Ingredients

  • 1 teaspoon olive oil
  • 1 clove garlic
  • 1 carrot
  • 2/3 cup onion
  • 480 grams roma tomatoes
  • 1 teaspoon herbes de provence
  • 1/2 teaspoon oregano
  • salt and ground black pepper

Directions

  1. Saute the garlic, onion, and carrot in the olive oil in a pan. Cook for 5 minutes on medium heat, stirring frequently until the onion starts to brown.
  2. Add the tomatoes, Herbes de Provence, and oregano, cover the pot, lower the heat, and let simmer for 10 minutes.
  3. Remove from heat, set aside for 10 minutes before blending in the blender, adding salt and pepper.

This is a good multipurpose recipe. I make it in quarts and keep in the refrigerator so my kids can come in from school and make English muffin, pizza bites. The only adjustment I make is to add grated parmesan right into the sauce.
