Ingredients

  • 2 tomatoes (ripe)
  • 1 garlic clove (peeled)
  • 1 onion (slice)
  • 1 chile pepper (green)
  • 1 tablespoon vegetable oil
  • salt

Directions

  1. Saute the tomatoes, garlic, onion, and chile pepper in a skillet on medium heat with a tablespoon of oil. Cook for five minutes on high heat until browned.
  2. Place the onion, garlic, and salt in a mortar and pestle and begin grinding everything up.
  3. Add the tomatoes and grind into a sauce.
  4. Chill or heat for use on pasta.

I have had a mortar and pestle in my cabinet for years without ever using it. Once I found this recipe I knew I had to try it; man was I surprised. Not only was it one of the easiest ways I have ever used to create tomato sauce, it was one of the best tasting sauces I have made in quite some time. This will be my method to make tomato sauce from now on. Excellent 5 star recipe.
