Thought to have originated in Poland, savarin is a rich, yeasted cake, that's usually soaked in rum or kirsch and finished with a dollop of whipped cream. In this case, the cake is soaked in alcohol-spiked lemon syrup before it's removed from its mold and garnished with marmalade and fruit slices. The southern Italian liqueur, limoncello, would certainly work well here.

Ingredients

  • 250 grams pastry dough (puff, or pie crust)
  • 150 grams heavy cream
  • 90 grams parmesan cheese (grated)
  • 4 tomatoes (large)
  • 4 eggs
  • parsley
  • 1/2 garlic clove (finely chopped)
  • 1/2 cup milk
  • salt
  • ground black pepper
  • butter (for the pie plate)

Directions

  1. Preheat the oven to 180C.
  2. Peel the tomatoes, eliminate the pulp, sprinkle the inside with salt, and turn them upside down to drain. Cut them into cubes and place them in a bowl with the grated cheese and the parsley.
  3. Add the eggs to the bowl and combine, then add the milk and heavy cream. Season with salt and pepper to taste.
  4. Roll out the dough and place it in a 24 centimeter pie plate.
  5. Add the garlic to the mixture and pour it into the pie plate.
  6. Bake the quiche for approximately 50 minutes, until golden.
  7. Remove the quiche from the oven and serve it warm.

Quiche recipes have become a very popular food in my house and this one happens to be one of our most desirable. It has a rich tomato taste that seems to melt in your mouth with each and every bite. I could never stray away from this 5 star quiche for any other recipe.
