Ingredients

  • 2 tablespoons oil
  • 1/2 pound onion (chopped)
  • 1 bunch spring onions (finely sliced)
  • 2/3 pound cherry tomatoes (halved)
  • 4 eggs
  • 3/4 cup sour cream
  • 1 pound pizza dough

Directions

  1. Preheat oven to 450°F. Heat oil and sauté onions for 3-4 mins. Add spring onions and cherry tomatoes and cook for 2-3 mins. Remove from heat, season and set aside. Meanwhile, mix eggs and sour cream. Season and set aside.
  2. Grease a 9 1/2 inch tart pan. Line with the pizza dough, pushing the dough into the edges. Fill with tomato mixture then pour egg mixture over top. Bake on bottom rack of oven for 15-20 mins. Cover with foil halfway through baking, if necessary, to prevent burning.
