Ingredients

  • 1 kilogram fresh tomatoes (peeled and lightly crushed)
  • 1 red pepper
  • 300 grams sugar
  • 1 lemon zest (and juice)
  • 1 tablespoon fresh ginger (grated)
  • 1 teaspoon cumin (each:, cinnamon, and pink pepper)
  • 1 teaspoon salt
  • 1/2 vanilla beans (cut in half lengthwise and seeds scraped, optional)

Directions

  1. 1In a large saucepan, dissolve the sugar in a little water, add the lemon juice and zest.
  2. 2When the sugar dissolves, add the chopped tomatoes, red pepper, and spices and let boil gently without a lid, stirring occasionally.
  3. 3Just before turning off the heat add the vanilla.
