Description

You can't go wrong with a bowl of creamy tomato soup for lunch or dinner (say, accompanied by a toasty grilled cheese sandwich). This one is made with fresh grape or pear tomatoes, which are available year-round in grocery stores, and tomato puree for deeper flavor. It can be ready in about 15 minutes and, since there's only a couple tablespoons of sour cream in the whole batch, has just 80 calories per serving.

Ingredients

  • 1 tablespoon butter
  • 1 onions (peeled and diced)
  • 1 garlic cloves (peeled and minced)
  • 1 kilogram teardrop tomatoes (chopped)
  • 2 tablespoons tomato purée
  • 1 basil leaves (minced)
  • fresh rosemary
  • sugar
  • salt
  • 2 tablespoons sour cream

Directions

  1. 1Add the butter to a skillet and melt on medium heat. Saute the onion and garlic for 5 minutes.
  2. 2Add the chopped tomatoes, tomato puree, and basil, and rosemary to taste. Saute for 3 minutes.
  3. 3Add the ingredients to a food processor and puree until smooth. Strain to remove and seeds.
  4. 4Add a pinch of sugar and salt to taste. Add the sour cream and mix well.
  5. 5Plate and serve.
