- 2 yellow onions
- extra virgin olive oil (for onions and garlic)
- 8 garlic cloves (for vegetable mix)
- 3 inches fresh ginger
- 1 jalapeño (more or less to taste)
- 2 lb. ripe tomatoes (Roma, heirloom, or beefsteak)
- coarse salt (for onions)
- 1/4 cup extra virgin olive oil (for tomatoes)
- 4 garlic cloves (for tomatoes)
- black pepper
- coarse salt (for cashews)
- water (for thinning soup)
- fresh basil leaves (for garnish, optional)
- extra virgin olive oil (for drizzling)

It was ok. Could use a stronger tomato flavor. The onion “jam” was really good, though. And don’t forget the basil!

The soup turned out great!!! I even got a thumbs up from my 9 y.o. for the soup part. I had no basil and used cilantro instead and it was still delicious. Now I have a recipe for cashew milk besides placing it over noodles!!!

Usually I shy away from making tomato based soups because they are too tomato flavored if that makes sense. This was so amazing. The spicy onion jam wasn’t really “jam” but it definitely had a lot of flavor. I also didn’t have any basil, so I used spinach and that was amazing too. What a great flavor soup!

This is the 2nd time I made this. Both time it came out excellent. Done it with Roma's and this time Beefsteak. And it's vegan, so easy to serve to any of your friends. One variation I did was to pick out the ginger after caramelizing and half the jalapeno, and put it in blender.

Delicious! Tomato soup redefined, our new favorite. Wow. Watch your cashews!
Now my favorite soup and sauce of all time. I use it on everything. Pasta, vegetables, etc. (I don’t add any ginger.)

This was over the top fantastic!! I got the tomatoes and basil from my garden which is so cool to pick from the garden and cook in a recipe 5 minutes later!
The onion jam just adds so much flavor and interest to the soup and takes this soup to a whole new level! Thanks Chef! My husband and I love it!!!

followed the recipe as instructed and it was de-licious! my husband had no idea it was vegan and asked for seconds. just be sure to really blend the cashews before adding the tomatoes.

I found it way too complicated for the unsatisfying result. For me it simply it is not that good. Also, I believe Yummly can still improve in the creation of cooking videos, the chef in the video does not tell you quantities, or durations as he explains and executes the recipe, so I had to be constantly checking against the written instructions and ingredients list, which is a bit frustrating when it is the first time you make the recipe.
