Ingredients

  • 4 cups chicken stock
  • 2 tablespoons tom yum paste
  • 7 ounces mixed mushrooms (roughly chopped)
  • 4 dried shiitake mushrooms
  • 10 liquid
  • 1 lime (juiced)
  • 1 tablespoon fish sauce
  • 1 red chili (long, sliced)
  • 1/2 bunch cilantro leaves (fresh)

Directions

  1. Bring stock to a boil. Whisk in tom yum paste then reduce heat to low. Add fresh and dried mushrooms along with reserved soaking liquid. Simmer for 5 mins, until soup is reduced slightly.
  2. Add remaining ingredients and simmer for 1 min, until heated through. Serve.
