Ingredients

  • 2 tablespoons sweet soy sauce
  • 2 teaspoons sambal oelek
  • 1 teaspoon fresh ginger (finely grated)
  • 1 clove garlic (peeled and minced)
  • 10 1/2 ounces firm tofu (drained, cut into 8 cubes)
  • 2 tablespoons cornstarch
  • 2 tablespoons peanut oil
  • 5 1/4 ounces snow peas
  • 5 1/4 ounces sugar snap peas
  • 1 bunch asparagus (trimmed, cut into 1 inch pieces)
  • 2 tablespoons crunchy peanut butter
  • 1 tablespoon lime juice

Directions

  1. Combine sweet soy sauce, sambal oelek, ginger and garlic. Add tofu and toss to coat. Marinate for 15 mins.
  2. Drain tofu, reserving marinade. Toss tofu in cornstarch, shaking off excess. Heat oil in a wok over high heat. Stir-fry tofu, in batches, for 2-3 mins, until golden and crisp. Remove from wok.
  3. Add snow peas, sugar snap peas and asparagus and stir-fry for 2-3 mins, until tender but still crisp. Add reserved marinade, peanut butter and lime juice. Stir-fry for 1-2 mins, until heated through. Serve vegetables topped with tofu.
