Ingredients

  • 2 1/4 pounds potatoes
  • 6 tablespoons oil
  • 2 onions (peeled and finely diced)
  • 2 tablespoons butter
  • 1 pound carrots (peeled, halved lengthwise and sliced on a bias)
  • 2/3 pound frozen peas (thawed)
  • 1 pinch sugar
  • 7 ounces sausages (tofu)
  • 1/2 bunch fresh parsley (chopped)

Directions

  1. Cook the potatoes in boiling water for 25 mins. Drain, plunge in cold water then peel. Set aside to cool. Slice the potatoes on a bias. Heat 4 tbsp oil in a large frying pan and sauté the potatoes, turning regularly, until they're golden brown all over. Add the onions and sauté briefly.
  2. For the carrots and peas, melt the butter in a saucepan. Add the carrots and sauté for about 5 mins. Add the peas and 1 pinch of sugar and season to taste. Sauté over low heat for about 5 mins.
  3. Meanwhile, heat 2 tbsp oil in a frying pan and cook the sausages. Remove from the pan, cut them into pieces and serve with the potatoes and vegetables, sprinkled with parsley.
