Tofu Patties with Thai salsa

  • 14 ounces beans (cannelini, rinsed, drained)
  • 10 ounces firm tofu (drained)
  • 1/4 cup breadcrumbs (fresh wholewheat)
  • 1 red onion (roughly chopped)
  • 1/4 cup mint leaves
  • 1/4 cup cilantro leaves
  • 1 medium egg (lightly beaten)
  • 2 tablespoons teriyaki marinade
  • 1 clove garlic (crushed)
  • 1/4 cup self raising flour
  • 2 tablespoons oil
  • 8 rolls (Turkish, split, toasted)
  • alfalfa sprouts (to serve)
  • cilantro leaves (to serve)

  • 3 Roma tomatoes (finely chopped)
  • 2 tablespoons chopped cilantro
  • 1 red chili (small, finely chopped)
  • 2 tablespoons lime juice
  • 1 teaspoon brown sugar

    Directions

    1. Place beans, tofu, breadcrumbs, onion, herbs, egg, teriyaki marinade and garlic in a food processor. Process until smooth. Add flour. Process until combined. Chill.
    2. Heat oil in a medium frying pan on high. Spoon large dollops of mixture into pan (to make 8 patties). Cook for 2-3 mins each side, until firm, golden, and cooked through. Drain on paper towel.
    3. To make the salsa combine all ingredients in a bowl. Serve patties on rolls, topped with salsa, sprouts and cilantro leaves.
