Ingredients

  • 100 grams brown sugar
  • 2 tablespoons water
  • 200 milliliters cream
  • 24 grams rennet (junket, powder)
  • 500 milliliters milk
  • 800 milliliters pudding

Directions

  1. In a large saucepan, place the sugar and water.
  2. Simmer until the sugar is dissolved and caramelized.
  3. Heat the cream in the microwave, and carefully pour in the caramel.
  4. Stir, and let boil a few minutes until very smooth. Set aside.
  5. Mix the rennet with half the milk. Bring to boil.
  6. Add toffee sauce, and whisk until mixture boils again.
  7. Remove from heat for a few seconds, stir, and heat again for a few more minutes until it thickens.
  8. Divide into individual bowls, refrigerate until pudding solidifies, and is well chilled.
