  • 1/4 cup dark brown sugar (packed, can substitute light brown sugar)
  • 1/2 cup white granulated sugar
  • 1 tablespoon vanilla extract (I used Vain Tahitian Vanilla extracted in Cane Rum)
  • 2 eggs (room temperature)
  • 1 pinch salt
  • 2 1/4 cups flour (all-purpose)
  • 1 teaspoon baking soda
  • 2 teaspoons cornstarch
  • 1 cup toffee (cut into chunks and pieces, option to reserve a few chunks to top the cookies when they come out of the oven)
