The key to this dish is making the batter carefully so that it rises nicely. Beat the eggs, then, whisk in the flour a little at a time, mixing well. Gradually add in the milk, making a smooth batter. Rest it for 1-2 hours. Preheat the oven and roasting tin. Fry the sausages in dripping or oil until browned. Transfer to the hot roasting tin, heat through, pour in the batter mix and bake for 25 minutes until risen. Serve.

  • 3 medium eggs
  • 250 milliliters plain flour (cup of)
  • 300 milliliters semi-skimmed milk
  • 6 cumberland sausages (good-quality, approx. 450g)
  • 1 dash Knorr Chicken Touch of Taste (or Beef)
  • 25 grams beef dripping (or vegetable oil)
  • gravy (to serve)

turned out really nice, made 2. 1 with pork sausages the other with meat free sausages. Family ate without complaint
looked good but found too heavy. Think there might be too much milk

Really liked this! I think the quality of the sausages you use will make the biggest difference. I used fat grill sausages and they're amazing. Basically use the sausages you'd be happy to eat on their own.

The batter was a little stodgy but probably due to my partner opening the oven half way through!
