Description
The key to this dish is making the batter carefully so that it rises nicely. Beat the eggs, then, whisk in the flour a little at a time, mixing well. Gradually add in the milk, making a smooth batter. Rest it for 1-2 hours. Preheat the oven and roasting tin. Fry the sausages in dripping or oil until browned. Transfer to the hot roasting tin, heat through, pour in the batter mix and bake for 25 minutes until risen. Serve.

Directions
- Preheat oven to 190˚C.
- Break the eggs into a large bowl and whisk vigorously.
- Add the flour little by little, sprinkling it over the surface of the beaten eggs and whisk until it makes smooth paste.

Really liked this! I think the quality of the sausages you use will make the biggest difference. I used fat grill sausages and they're amazing. Basically use the sausages you'd be happy to eat on their own.

The batter was a little stodgy but probably due to my partner opening the oven half way through!
