Ingredients

  • 10 green tomatoes
  • 1/4 onion
  • 1 clove garlic
  • 4 chilies (arbol, cut in half)
  • 5 chilies (rattle, cut in half, or Guajillo chilies)
  • 1/2 cube tomato bouillon (or a roasted tomato)
  • salt (optional)

Directions

  1. In a saucepan, add the tomatoes and the onion. Stir occasionally and cook until just before these are burnt on all sides. Add the garlic and continue to cook for 1 or 2 more minutes.
  2. Separately, place the chilies on a griddle. Stir constantly to keep them from burning.
  3. Remove from the stove and add to a blender, along with the tomato bouillon. Puree until smooth.
  4. Taste and season with salt if needed.

I thought this salsa was spicy. To make a milder version, reduce the amount of chilies, there is quite a bit in here. After removing the heat, it’s a super recipe for my family.
