Ingredients

  • 2 tablespoons instant coffee
  • 80 milliliters warm water
  • 125 grams vanilla wafers (ground)
  • 200 grams mascarpone cheese
  • 15 grams powdered sugar
  • 3 tablespoons granulated sugar
  • 3/4 teaspoon vanilla extract
  • 2 tablespoons amaretto
  • 30 grams chocolate (Nesquik, powder)

Directions

  1. Mix the instant coffee with warm water. Let it cool off.
  2. Mix the ground vanilla wafers with the coffee and let it sit for 15 minutes.
  3. Mix the mascarpone cheese, powdered sugar, granulated sugar, vanilla extract, amaretto, and vanilla wafers.
  4. Form 35 truffles, sprinkle them with chocolate powder, let them sit in the refrigerator until they are cold, and serve.

I doubled the amount of instant coffee the recipe called for and changed the amaretto to rum extract. The flavor was amazing. A mold is better than just using your hands. I used a mini muffin pan. They have a uniform shape and size that way.
