Tiramisu is a classic Italian dessert that features 3 bold ingredients that come together for a decadent dessert. Those three ingredients, mascarpone, coffee, and cocoa powder are transformed into muffins for a different take on the classic. These muffins have all the flavors of the classic dessert, but are much less time and energy consuming to make. Top them with a dallop of whipped cream for a simple dessert.

Ingredients

  • 220 grams flour
  • 110 grams granulated sugar
  • 1 tablespoon baking powder
  • 85 grams butter (melted and cooled)
  • 1 egg
  • 125 grams mascarpone cheese
  • 125 milliliters coffee
  • cocoa powder

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a bowl, sift together the flour, sugar, and baking powder.
  3. In another bowl, beat together the butter and egg. Once mixed, add the mascarpone cheese and coffee. Combine well.
  4. Add the dry mixture to the wet mixture, making sure it is well incorporated.
  5. Fill muffin tins halfway, sprinkle cocoa powder, fill the rest of the way up, then sprinkle more cocoa powder.
  6. Bake for 20-22 minutes. Pierce the center with a toothpick. If it comes out clean, the muffins are done.
  7. Cool and enjoy.

I love Tiramisu, and the thought of a muffin was intriguing. I found this to be okay, but I still prefer the plain dessert better. They have the coffee flavor that I look for, but they are very moist too. Cook them slow and on low is my advice. They are a great muffin that is different than the normal chocolate chip variety. They are super sweet so you may want to cut back on the sugar a bit if you are not a fan of ultra-sweetness.
