Description

Even if you don't follow tradition and bake this custard in a clay dish, it will be a marvel of creamy goodness and redolent of cinnamon--used both to infuse the hot milk with flavor (in stick form) and also to garnish the top with a liberally dusting (ground). The only other ingredients are whole eggs and egg yolks, for extra richness, grated lemon zest, and sugar, making this an anytime dessert that puts kitchen basics to good use.

Ingredients

  • 4 eggs (separated)
  • 120 grams sugar (divided)
  • 500 grams mascarpone
  • 400 grams ladyfingers
  • 400 milliliters coffee
  • cocoa powder

Directions

  1. In a bowl, mix together the egg yolks with half the sugar.
  2. Once mixed, add the mascarpone cheese and beat well until there are no lumps.
  3. In another bowl, add the egg whites and whisk until stiff peaks, then add the rest of the sugar.
  4. Fold the 1st mixture into the 2nd mixture slowly so as not to lose volume.
  5. One by one, soak the ladyfingers for 3 seconds each in the coffee and make a layer of them in the bottom of a baking dish.
  6. Cover the ladyfingers with a layer of cream, and smooth out with a spatula. Sift cocoa powder onto the cream.
  7. Repeat all 3 layers one more time.
