Ingredients

4 egg yolks (and whites separated)
120 grams sugar (divided)
500 grams mascarpone (room temperature)
400 grams ladyfingers
400 milliliters coffee
cocoa powder (bitter)

Directions

1In a bowl, whisk together the egg yolks and 60 grams of sugar until combined. Add the mascarpone cheese and whisk until there are no lumps.
2In another bowl, whisk together the egg whites with the remaining 60 grams of sugar until the mixture comes to stiff peaks.
3Carefully fold the egg yolk mixture into the egg white mixture, trying not to lose volume.
4Set out a baking tray with a flat bottom.
5Soak the ladyfingers in coffee for a maximum of 3 seconds each and set them down in a layer in the baking tray.
6Cover the ladyfingers with a layer of the cream you made. Use a spatula to spread it out evenly.
7Sprinkle with cocoa powder.
8Repeat all layers again, finishing with a layer of cocoa powder.
