Spring has certainly sprung. Serve as part of your spring ham buffet or with pork chops.
- 2 tablespoons butter
- 1 cup onions (diced)
- 1 1/2 teaspoons lemon zest (grated)
- 20 ounces peas (frozen tiny)
- black pepper
- 1 tablespoon fresh mint (chopped)
- In a medium saucepan, melt butter over low heat. Add the onion and lemon zest and cook gently, stirring occasionally, until onion is soft but not browned, about 4 minutes. Add the peas to the pan and stir to combine thoroughly. Season with salt and pepper and cook, stirring, for about 5 minutes or until the peas are heated through. Stir in mint and serve immediately.
