Spring has certainly sprung. Serve as part of your spring ham buffet or with pork chops.

  • 2 Tbsp. butter
  • 1 cup onion (diced)
  • 1 1/2 tsp. lemon zest (grated)
  • 20 oz. peas (frozen tiny)
  • salt
  • black pepper
  • 1 Tbsp. fresh mint (chopped)

    Directions

    1. In a medium saucepan, melt butter over low heat. Add the onion and lemon zest and cook gently, stirring occasionally, until onion is soft but not browned, about 4 minutes. Add the peas to the pan and stir to combine thoroughly. Season with salt and pepper and cook, stirring, for about 5 minutes or until the peas are heated through. Stir in mint and serve immediately.
