Caramelized pears and mango sit atop perfectly golden french toast. Sprinkled with fresh blueberries and chopped nuts and drizzled with maple syrup, this breakfast item will be sure to impress at your next brunch.

Ingredients

  • 4 large eggs
  • 1 cup milk
  • 1/4 cup orange juice
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon orange blossom
  • 1 tablespoon brown sugar
  • 1 lemon zest
  • 1/4 teaspoon cinnamon
  • grated nutmeg (Pinch of freshly)
  • 1 pinch salt
  • 1 slice sour dough bread
  • pure maple syrup
  • flaked almonds
  • pears
  • mango
  • fruit
  • yogurt

Directions

  1. In a small saucepan, fry the pears and mango in a little bit of salted butter and brown sugar, for about ten minutes. Add the cinnamon.
  2. Store/reserve/save for later.
  3. Whisk together the eggs, milk, juice, vanilla, orange blossom, sugar, zest,
  4. cinnamon, nutmeg and salt in a bowl and set aside.
  5. Dip the bread slices quickly into the mixture.
  6. In a hot pan, melt a tablespoon of butter and arrange the slices of bread in the pan.
  7. Fry for about 3-4 minutes on each side until they're golden brown.
  8. Transfer to a wire rack, and grill in the oven for a few minutes.
  9. On a plate, layer slices of the french toast, add a tablespoon of yogurt, and
  10. the pear-mango mixture still hot. Sprinkle with blueberries and flaked almonds.
  11. Pour maple syrup on top.

This bread is indeed perfect! We've served it along side of bacon and eggs or as the main with various fruits and a dollop of whipped cream. It’s also good to grab, go and enjoy.
