Description

Caramelized pears and mango sit atop perfectly golden french toast. Sprinkled with fresh blueberries and chopped nuts and drizzled with maple syrup, this breakfast item will be sure to impress at your next brunch.

Ingredients

4 large eggs
1 cup milk
1/4 cup orange juice
1 tablespoon pure vanilla extract
1 tablespoon orange blossom
1 tablespoon brown sugar
1 lemon zest
1/4 teaspoon cinnamon
grated nutmeg (Pinch of freshly)
1 pinch salt
1 slice sourdough bread
pure maple syrup
sliced almonds
pears
mango
fruit
yogurt

Directions

1In a small saucepan, fry the pears and mango in a little bit of salted butter and brown sugar, for about ten minutes. Add the cinnamon.
2Store/reserve/save for later.
3Whisk together the eggs, milk, juice, vanilla, orange blossom, sugar, zest,
4cinnamon, nutmeg and salt in a bowl and set aside.
5Dip the bread slices quickly into the mixture.
6In a hot pan, melt a tablespoon of butter and arrange the slices of bread in the pan.
7Fry for about 3-4 minutes on each side until they're golden brown.
8Transfer to a wire rack, and grill in the oven for a few minutes.
9On a plate, layer slices of the french toast, add a tablespoon of yogurt, and
10the pear-mango mixture still hot. Sprinkle with blueberries and flaked almonds.
11Pour maple syrup on top.
