- 3 pounds beef roast
- 6 potatoes (peeled and sliced into wedges)
- 1 bag baby carrots
- 2 onions (medium, sliced in half)
- 2 packages brown gravy mix
- 2 cups water

It was so good! I thought I had a pot roast end up being a big pork loin. Used it the same cooked for only 6 hours vs the 8 in high and only used half an onion as I was worried it would be too onion-y for my boys.

It was really easy to make but the meat was dryer than I would have liked.

I only eat organic, so I used grass-fed organic beef and substituted the packaged gravy with organic low sodium beef broth. Included additional veggies such as scallions as well! Delicious. Also you may want to pan fry the seasonings into the meat before placing it in the crock pot. It will flavor everything else.
