- 1 1/2 tablespoons chipotle (powder, Use 1.5 tablespoons if you like it spicy)
- 2 teaspoons dried oregano
- 2 teaspoons salt
- 1/2 teaspoon cayenne (optional)
- 3 pounds ground beef
- 1 can beer (or bottle, I use Coors Light)
- 14 ounces black beans (rinsed and drained)
- 14 ounces red kidney beans (rinsed and drained)
- 24 ounces crushed tomatoes
- 24 ounces diced tomatoes

I used blue moon for the beer, and substituted another can of kidney beans for the black beans(just not a fan of them lol) and my pot was way too small so left out one of the 2 cans of diced tomatoes at the end but it turned out incredible! my mother, wife, daughter, and I all LOVED it! I spiced mine up after trying it with some lovely green habanero sauce after of course though!(:

The best chili ever. We top it with cheddar cheese and corn chips and sour cream....awesome. The last time I made it I only had 4 cans of rotel tomatoes, 1 can of tomatoe paste and doubled the beer...still delicious.
