  • 2 teaspoons turmeric (optional, but it gives it a lovely golden color, plus it's good for you)
  • 1 1/2 teaspoons sweet paprika (or sweet smoked paprika)
  • 1 1/2 teaspoons onion powder
  • 1/2 teaspoon garlic powder
  • 3 tablespoons all-purpose flour
  • 1 quart whole milk
  • 2 ounces cream cheese
  • 1/2 cup full fat sour cream
  • 8 ounces extra sharp cheddar cheese (grated)
  • 8 ounces colby jack cheese (grated)
  • 4 ounces Parmesan cheese (finely grated, not from the green can)
  • freshly ground black pepper
