  • 2 pinches sea salt
  • 3 tablespoons parmigiano reggiano cheese (finely grated, plus more for serving, I use my microplane)
  • 7 ounces fresh mozzarella cheese (cut into 1/2-inch cubes, *preferably fresh mozzarella not packed in water)
  • 6 fresh basil leaves (large, plus more for garnishing)
  • red pepper flakes (crushed dried, optional)
