  • 1 teaspoon shrimp paste (dried)
  • 2 tablespoons Thai fish sauce
  • 1/2 teaspoon grated nutmeg (freshly)

  • 2 tablespoons groundnut oil
  • 2 red onions (sliced)
  • 250 grams Jersey royals (halved or quartered depending on size)
  • 2 chillies (red bird’s-eye, slashed)
  • 250 milliliters chicken stock
  • 250 milliliters low fat coconut milk
  • 2 tomatoes (skinned and finely chopped)
  • 6 kaffir lime leaves
  • 1 1/2 teaspoons palm sugar (grated)
  • 2 tablespoons soy sauce
  • 2 tablespoons Thai fish sauce (plus extra to taste)
  • 500 grams king prawns (veins removed)
  • 1 lime (juice only)
  • 1 handful thai basil
  • 25 grams toasted peanuts (roughly chopped)
  • 1 red chilli (large, deseeded and sliced on an angle)
