- For Peanut Slaw: WHISK together peanut butter, pineapple topping, lime juice, soy sauce, gingerroot and red pepper flakes in large bowl until smooth. Stir in cole slaw mix, green onion and cilantro. Cover and chill until ready to serve.
- For Sliders: COMBINE peanut butter, pineapple preserves, gingerroot, soy sauce and garlic in large bowl. Add chicken and bread crumbs. Mix gently. Roll chicken mixture into 12 equal sized balls. Press each ball down slightly to form patties.
- HEAT 1 tablesoon oil in large skillet over medium heat. Place 6 patties in skillet. Cook 3 minutes per side, or until internal temperature reaches 165°F. Remove; keep warm. Repeat with remaining oil and 6 patties. Place each patty over roll bottoms. Place pineapple slice, if desired, on top of patty. Spoon equal portions of slaw over each patty. Cover with roll tops.
- *Ground turkey can be substituted for ground chicken.
