Description

This Thai-inspired recipe is a great dinner for nights when you want to go meatless. The combination of vegetables creates a nice flavor and texture contrast. Since the sauteed vegetables are served over rice, this dish is super filling. A drizzle of sweet and sour sauce over the vegetables and rice before serving brings all the flavors together. This meal is light and healthy with only 260 calories per serving and it comes together in about 35 minutes for a quick and easy dinner.

Ingredients

  • 1 onions (large, chopped)
  • assorted fresh vegetables (washed and chopped, suggestions: green and red peppers, leeks, celery, carrots, radishes, broccoli, and bean sprouts)
  • 1 can mushrooms (sliced)
  • salt (to taste)
  • pepper (to taste)
  • 2 tablespoons soy sauce
  • seasoning (Asian, to taste)
  • 250 grams jasmine rice
  • sweet and sour sauce (Thai)

Directions

  1. Begin by heating the wok with a splash of olive oil. Add the chopped onion and saute it until it begins to brown. Add the assorted vegetables and the mushrooms.
  2. Season the mix with salt and pepper to taste, then add the soy sauce and the asian Seasoning.
  3. Stir the ingredients while cooking so that the vegetables absorb the flavors and seasoning.
  4. Serve immediately alongside the Thai jasmine rice and drizzling with the Thai sweet and sour sauce.
