Description

This rice recipe makes for a filling and flavorful meal that comes together in about 45 minutes for an easy meal. The rice is cooked in chicken stock, which helps boost the flavor of the whole dish. Sauteed vegetables, chicken, and mushrooms give the dish some substance as well as a nice dose of protein. A sprinkle of soy sauce pulls everything together. At under 300 calories, this recipe is a great choice if you are watching what you eat.

Ingredients

200 grams jasmine rice
600 grams water
1 chicken stock cubes
1 tablespoon vegetable oil
1 onions
1 garlic
1 green bell pepper
1 skinless chicken breasts
180 grams black trumpet mushrooms
soy sauce
fresh thyme

Directions

1Cook the rice in the water, adding a bouillon cube to increase flavor. Cook for about 20 minutes. Remove the rice from the stove and set aside.
2In a skillet on low heat, add the oil and saute the onion, garlic, and bell pepper and garlic for about 5 minutes.
3Add the diced chicken and cook for 3 minutes.
4Add the mushrooms (substitute chanterelles or other wild mushroom, if necessary) and cook for another 5 minutes, adding a drizzle of soy sauce.
5Add the rice, continue to cook for a few minutes. Serve with a sprinkle of fresh thyme.
