  • 1 pound pork tenderloin (cleaned, 3/4" dice)
  • 1 small yellow onion (diced)
  • 5 tablespoons Thai red curry paste
  • 3/4 cup red bell pepper (chopped)
  • 3/4 cup yellow bell pepper (chopped)
  • 16 fluid ounces vegetable stock (OR chicken stock)
  • 4 ounces green beans (cut into 2-inch pieces)
  • 15 1/2 ounces chickpeas (rinsed and drained)
  • 1 cup Chobani Greek Yogurt (Plain 0%)
  • kosher salt (to taste)
  • fresh ground black pepper (to taste)

    1. 1. In sauce pot, heat oil
    2. 2. Add pork tenderloin and sear on all sides, stirring as needed
