    A tasty noodle soup. Simple construction makes for a good weekday dinner. I would tweak it and maybe add lemon grass and some Thai chillies next tim. Additionally I would leave out the diced onions, they did not blend well with this recipe. All in all it satisfies a Thai soup craving.

    Easy, go to curry soup recipe. Don’t be afraid to improvise with whatever veggies you have on hand. Can alternate protein and can be easily made vegetarian friendly. Yum!

    The most amazing thing I have ever tried. Easy to cook and you can play with different type of noddles. I is always comes out good! Dam right Thai noodle soup!

    Halved the recipe with the exception of the coconut milk. Super easy to bring everything together. Next time I will wait to add the chicken back in as I felt it was a little dry. We also like things a bit spicy, added half a serrano pepper!

    Very tasty. I did make some change. I doubled the red curry paste, added broccoli, carrots and mushrooms and red pepper flakes. Next time I make it I will likely double the coconut milk as I thought it should be creamier.

    Turned out very well everything on the menu was used you could add chili peppers to make it spicier if you want

    This soup was AMAZING! I followed it exactly, I only had about 2 teaspoons of the fresh ginger but you couldn’t tell the full tablespoon wasn’t there my husband talked about it for hours after we ate definitely making again

    i love the combination of flavors. i added 1 large jalapeno and 8 thai peppers, i love spice! also used 2 cans of coconut milk. added mushrooms as well and about 1 tbsp soy sauce. great recipe!!

    Was delish, made my own chicken stock in the pressure cooker. The flavors were intense, used a few different ingredients in the soup, added some pak choi at the end too! Used only 1 tablespoon of red curry paste so it wasn’t too spicy 🌶 will definitely make it again sometime.

    Great balance! Love it as it is but sometimes as options and depending on what I have on hand I add bean sprouts, peanuts, bok choy, water-chestnuts and replace olive oil with coconut oil.

    This soup is spectacular! I added about another tbs of curry and a wee bit more ginger, and my husband and I absolutely loved it. This will definitely be a must remake!

    Very tasty! We love Thai flavors. I used Green Curry Paste because that was on hand, plus I wanted to start out mild. Will use red next time for added punch.
