This recipe is so easy and so so good!! Better than any takeout around here (and obviously much cheaper) and it works well with every vegetable I’ve tried it with.

There’s a lot of ingredients but it turned out well and my husband loved it. Will be making it again!

This was excellent! We switched lemon for lime as its what we had in our pantry and cooked the rice with star anise and half/half chicken broth in the rice cooker. Huge fan, will be making this again and add red chillies.
Bonus we have garlic infused oil we used to fry up the onions chillies and ginger in first for the aromatics.

Great flexible recipe. The key is in the sauce ingredients. I added more spice because we like it hot. Great recipe!

Wonderful curry. We are vegetarian so instead of chicken we put in a whole bunch of mushrooms and it was wonderful. Looking forward to making it again.

Holy cow! Great dish. Fast to make — don’t let all the ingredients scare you. I added Thai basil, broccoli, sugar snap peas. Did not add the cornstarch. Doubled the curry paste and increased the coconut milk by 50%.

Great curry recipe to have in hand, I used frozen carrots as the vegetable since my son doesn’t like cooked peppers. The downside it is high in salt due to both fish sauce and soy sauce. I substituted coconut aminos for the soy sauce and omitted the 1/4 tsp salt. It’s still high in salt but it drops it below a 1000mg.

Flavors are great! Good recipe for cleaning out fridge. I used leftover turkey instead of chicken and served with jasmine rice and bread!

Great flavor! I used a wider variety of veggies, and had to increase the coconut milk to compensate, but the sauce is a base I’ll bring into our stir fry rotation.

Oh my gosh! This is fabulous! The layers of flavors are amazing! Don’t let the amount of ingredients fool you, this is really easy to make! And so delicious!
Update: I changed this into a soup dish by adding another can of coconut milk (using lite version) and substituted shrimp at the end instead of chicken. Fantastic!

Delicious! I ended up using carrots, broccoli, and red pepper to use up what I had in the fridge, and it was still good I especially love the sauce

This recipe turned out great! Tastes very authentic. I added bamboo shoots and only used one red pepper. The sauce was a little thick but you can choose to not add the cornstarch or just thin with water instead. It’s a keeper!
