- 1 spaghetti squash (small, about 2 pounds)
- 1 broccoli (small, crown broken into florets)
- 2 teaspoons sesame oil
- vegetable oil
- 1 garlic clove (minced)
- 3 tablespoons creamy peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon lime juice
- 2 tablespoons water (as needed)
- 2 scallions (chopped)
- 2 tablespoons roasted peanuts (chopped)
- sriracha (to taste, optional)

This is great! Only adjustment I made was adding a bit of minced ginger and a pinch of garlic powder to the sauce. Don’t forget to season the squash!!! The sriracha at the end really brings it all together.

Pretty easy to make! If you have a large squash, double up on the sauce (which is easy to do) I thought I had a ton of broccoli but it was barely enough, maybe I’ll add more or diff types of veggies next time! Perfect texture and sub for pad Thai

I added some stuff to the sauce because it didn’t taste right to me, i added garlic and fresh ginger and some fresh cilantro as well. But it was pretty good overall, especially with the lime.

Flavors were well matched. Kid loved the peanut sauce so next time we will make double. Squash I found were large so it needed a little more broccoli.

Good-I doubled the recipe, but quadrupled the seasonings. I also added celery (because I had it) and snow peas ( because they are pretty). Picky kid ate too!

SO YUMMY! I added sautéed celery and onions as well which added some nice texture! It's also just as good when reheated so make extra for great leftovers!
