  • 1 cup jasmine rice
  • 6 boneless and skinless chicken breast (cut into cubes)
  • 14 1/2 ounces chicken broth
  • 14 ounces coconut milk
  • 6 tablespoons honey
  • crunchy peanut butter
  • 2 tablespoons lime juice
  • 2 scallions (sliced)
  • dry roasted peanuts (For Garnish)

    Directions

    1. Place the rice into the bottom of the slow cooker, top with the chicken.
    2. In a medium sized bowl , whisk together the remaining ingredients then pour over the chicken and rice.
    3. Stir to combine all of the ingredients then cover and cook on low for 4 ½ hours.
    4. After plating garnish with the chopped dry roasted peanuts.
