  • 1 pound lean ground pork
  • 3 garlic cloves
  • 2 shallots (small, minced or 1/2 of a red onion minced)
  • 1 jalapeño (medium fresh, seeded and minced or 1-2 tablespoons minced pickled jalapeño or if you like it really hot, use fresh serrano chillies.)
  • 1/2 cup fresh lime juice (preferably from Key Limes, a.k.a. Mexican limes, West Indian Limes)
  • 1/4 cup fish sauce
  • 1/4 cup light brown sugar
  • 2 tablespoons cider vinegar (or white)
  • 3 tablespoons chili sauce (Sweet Thai, many grocery stores carry this in their Asian food sections)
  • 2 teaspoons Sriracha sauce (most grocery stores carry this in their Asian food section)
  • 1 garlic clove (minced)
  • 1/2 teaspoon salt
  • 1 carrot (large, peeled and grated)
  • 1/4 cup cilantro leaves (fresh, and stems, chopped)
  • 1/4 cup fresh mint leaves (chopped)
  • 1/4 cup fresh basil (Thai basil is great if you can get it, chopped)
  • 2 green onions (chopped)
  • 1/2 English cucumber (peeled, seeded and sliced)
  • 1 head Boston lettuce (or 1 bag fresh spinach leaves)
  • 1 wedge lime

The recipe takes longer to prep than estimated, but well worth the extra time. Love the fresh herbs in this dish. The only modification I did was to season the pork with salt, pepper, and onion/garlic powder before cooking. Will definitely make again!
